My husband & I attended the St. John’s Catholic Church’s Fish Fry last Friday with our good friends Mike & Yvonne Bosch and Bill & Barbara Gholson. The Fish Fry is one of several annual fundraisers done by the local Parrish’s Knight’s of Columbus & an activity the entire community looks forward too. The fish fry and the church’s annual picnic are major community events, where you go to visit friends, family, and get the best-fried fish in Western Kentucky. The Picnic held in August is a major political event that draws national, state, and regional politicians.

Located just south of Lone Oak & Paducah KY St. John the Evangelist Catholic Church was founded in 1839 by a group of German Catholic immigrants who had settled in Western Kentucky several years earlier and the picnic was started in 1930’s.

What does this have to do with the cookbook “Favorite Recipes of Kentucky Celebrities?” The church sold the cookbook as part of their picnic fundraiser last August and one of their members contributed his mother’s Blackberry Cobbler recipe.

St. John’s member Phil Roof was a catcher for the Milwaukee Braves (1961 and 1964), California Angels (1965), Cleveland Indians (1965), Kansas City Athletics/Oakland Athletics (1966-69), Milwaukee Brewers (1970-71), Minnesota Twins (1971-76), Chicago White Sox (1976) and Toronto Blue Jays (1977).

He is the brother of former Major League Baseball outfielder Gene Roof and the cousin of former MLB outfielder and manager Eddie Haas.

In 15 seasons he played in 857 Games and had 2,151 At Bats, 190 Runs, 463 Hits, 69 Doubles, 13 Triples, 43 Home Runs, 210 RBI, 11 Stolen Bases, 184 Walks, .215 Batting Average, .283 On-base percentage, .319 Slugging Percentage, 687 Total Bases, 40 Sacrifice Hits, 6 Sacrifice Flies and 18 Intentional Walks.

Roof also served as bullpen coach for the San Diego Padres (1978), Seattle Mariners (1983-88) and Chicago Cubs (1990-91), and managed for 16 years in the Twins organization before his 2005 retirement.

Let it snow! Let it Snow! Let it Snow! Paducah and Western Kentucky received from 4 to 7 inches of snow this past week. It was beautiful with ice on our pond and woodpeckers and deer at our birdfeeders. What a beautiful gift from God!

The snow reminded me of a recipe in my Cookbook, "Favorite Recipes of Kentucky Celebrities.” The recipe was for Snow Ice Cream and came from Emmy award winning meteorologist John Belski. John has been the meteorologist at WAVE-TV in Louisville for over 20 years. He likes this recipe because it is directly related to the weather and can make it feel a little like summer in the middle of winter.

In addition to being an Emmy award winning meteorologist, John has received various awards from community organizations and publications including being named Best Of Louisville by the readers of Louisville magazine for a number of years and has been named Best of Kentucky by the readers of Kentucky Monthly magazine and the LEO's Readers' Choice Award. John has received the Special Service Award from the National Weather Service and was presented the Mark Trail Award for public awareness of NOAA weather radios. This prestigious national award was presented on Capitol Hill in Washington D.C.

His folksy, friendly style along with his weather knowledge makes him a favorite among viewers. Several years ago, John was among a select few TV meteorologists from around the country to be invited to the White House to meet with the President for a discussion on global warming.

Remember the proceeds from individual sales of the cookbook goes to non-profit organizations in the Paducah area and the cookbook is available as a fundraiser for any non-profit organization.

Eagles! Eagles! And more Eagles!!!!! That is what we had an opportunity to see this weekend. We went with friends on a dinner cruise aboard the 95 ft. Louisville-based CQ Princess Excursion yacht. It sails out of Kenlake Marina in Aurora, KY, to see the Eagles on the shores of Kentucky Lake. The eagles are nesting during the winter months in the Land Between the Lakes. We saw between 20 and 30 eagles as well as Blue Heron, Coots, and Red Tail Hawks. The LBL provides wildlife experts to help find the eagles and provide information on them. There are now over 200 eagles in the LBL.

And what does this have to do with the cookbook “Favorite Recipes of Kentucky Celebrities?” The Land Between the Lakes contributed one of the recipes in the cookbook. It was not your typical recipe. They sent a recipe for a “Suet Bird Feeder.” For all bird lovers this is a great recipe.

And what is Land Between the Lakes? When the Cumberland and Tennessee Rivers were impounded to create Kentucky Lake and Lake Barkley, an inland peninsula was formed. With more than 170,000 acres and 300 miles of undeveloped shoreline, The Land Between the Lakes is the corner stone of Western Kentucky’s $600 million tourism industry. Again, you will have to buy the cookbook to get the recipe.

Up date on new recipes for the latest cookbook I am compiling. It is made up of Tennessee celebrities. I received a recipe this week from the daughter of the late Grammy winning musician John Hartford. He wrote “Gentle on My Mind” and music for “Oh Brother Where Art Thou” among other things. I also received a recipe from Memphis Mayor A.C. Wharton.

I just received my booth assignment for the Kentucky Crafted Market held in Louisville. I will be in the publisher’s section in Booth 712. The Market is scheduled for March 4-7. Hope to see you there!

Congratulations to Meryl Streep for winning the Golden Globe for her role in “Julie and Julia.” I could so relate to that movie after creating the cookbook “Favorite Recipes of Kentucky Celebrities” and presently compiling the second cookbook “Favorite Recipes of Tennessee Celebrities.”

I received two great recipes for the new Tennessee cookbook last week. One from Kenny Rogers and the other from animal educator Jack Hanna.

Now I promised to do a blog each week about various contributors to the Kentucky cookbook. Before I start, I have two new organizations that are selling the Cookbook as a fundraiser. The Prestonsburg Convention and Visitor’s Bureau in Prestonsburg, KY and Cathy Carrico from Springfield, KY. Cathy is selling the cookbook as a fundraiser for the American Cancer Society’s Relay For Life Event in Springfield.

I am so thankful to have the opportunity to work with these two organizations!

Actor Kassie De Paiva was born and grew up in Morganfield, KY one of four children in a Southern Baptist family (Her father was a minister). She has starred in numerous television roles including Chelsea Reardon on “The Guiding Light”, Melrose Place, & Baywatch. She presently has a leading role as Blair Cramer on “One Life to Live.”

Kassie sent a salad recipe for the cookbook. She is a very caring person, who loves music. She is in a band: Divas of Daytime. They were recently in Franklin, KY doing a benefit concert and she is especially interested in the work and research for hearing loss. She hand makes hats called “Kassie’s Happy Hats”, which you can buy on her website. 100% of the proceeds goes to League of Hard of Hearing. I have exciting news! The Lexington Convention and Visitors Bureau (they are non-profit) just purchased cookbooks to give as gifts to various dignitaries and business people that come to Lexington. I hope they will consider it as a promotional tool for the 2010 World Equestrian Games. Patricia Knight, Vice President of Finance and Operations said, "Visitors love things like this."

I want to start doing a blog on some of the people and places that contributed recipes to my cookbook. After all, it would never have been possible with out all these wonderful people.

Speaking of Lexington… I received a recipe from Historic Spindletop Hall

The History of Spindletop Hall & Farm

On November 13, 1925, Miles Frank Yount struck oil at the Spindletop field in Beaumont, Texas. The fields produced over 340,000 barrels of oil an acre per year, pumping in excess of 50 million barrels within 5 years. Miles Frank and wife Pansy established a stable of American Saddle bred horses, quickly becoming recognized as a leader in the industry.

Spindletop Hall & Farm was established in 1935 on 800 acres of land in Lexington, KY. When completed, the mansion housed 40 rooms and over 45,000 square feet of floor space.

Spindletop Hall’s Award-winning Chef Ed Valente contributed an amazing recipe, “Sweet Potato, Sorghum, & Bourbon Pie.” He and his culinary team provide a variety of menus to cater to every taste – from regional cuisine to casual fare to five-star gourmet dining.

FAVORITE COOKBOOK !!!!

Leigh Landini Wright, who does the TASTE Section for the Paducah Sun recently did a story on her very favorite cookbook. She told of a student (at the school where she does Public Relations) who made a homemade cookbook as a gift for her.

This story brought back some very special memories. When my son was young, our family was very involved in church. One day after church, he ask me for a copy of my Chocolate Brownie Pie, which was his very favorite recipe. He said he could not tell me why.

On the following Mother’s Day, he gave me a homemade cookbook with all the favorite recipes of his bible class. It was made of blue construction paper with the title “COOKBOOK” printed in large letters with a crayon. In his eagerness to put it together, the recipes were stapled in up-side-down.

The cookbook is now very old, the construction paper is faded, and the pages are stained with chocolate and butter. However, each time I open it the cookbook brings a smile to my face. It brings back memories of a young child so loving and caring. A young child so eager to show his love. It truly is my VERY FAVORITE COOKBOOK.

I used the cookbook this Christmas holiday to make the traditional 3 pies. One for our dinner and 2 that I always make for my niece and nephew as part of their Christmas presents. It is still the Family Favorite.

Thanks to Leigh for bringing back such good memories.

I would also like to thank Leigh for doing several stories on the my cookbook “Favorite Recipes of Kentucky Celebrities.” I know she has so many request from various contributors. I really appreciated her including the cookbook.
